Russell’s Brown Rice Casserole

It’s rare to have a friend like Russell.  

I met him right after moving to Columbia 20 years ago and watched him do a fine job of raising his children while he runs a successful business and is active in community and church life.  We have been true blue friends ever since.  Russell invited me over one evening not long ago to have a dinner and game night with friends.  I always knew he was a magnificent cook so it was no surprise when this brown rice dish was a hit.  No gravy is needed for this as it is seasoned to perfection…just like my friendship with Russell.

Russell’s Brown Rice Casserole   from “Recipes with a Story Collection”

1/2 cup minced onions

1 stick butter

1 can beef broth

1 can beef consume

1 cup brown rice

Heat oven to 400 degrees – sprinkle minced onions in baking dish with one stick of butter. Brown onions in baking dish. Watch carefully so as not to burn. 

Take casserole out of oven and carefully add one can of beef consume and one can of beef broth. 

Stir in one cup of rice and place dish back in oven.  

Cook for 1 hour or so…test to make sure rice is done. 

My wish for you today is that you cultivate and savor positive friendships in your life.  They are really few and far between.  Your life will be richer for it.
