Turkey and Brown Rice Soup

After the holidays when turkey abounds, why not take some of those tasty leftover turkey pieces and make a hearty soup.  Here is a recipe I recently offered to bring over soup for friends who were not feeling well. Both husband and wife had caught a bug and they had been housebound for a few days. They needed something to nourish their bodies back to good health. I had experimented with this recipe and shared it with them in hopes they would feel better soon. As you can see, turkey can be an easy substitute for chicken.Â
They ate the whole pot in one sitting and the next day asked for the recipe! Â
Since then, I often make this for friends who need a little lift and it always seems to help.
My wish for you today is that you never get sick. However, if you find yourself feeling sickly, enjoy this hearty soup and you will, hopefully, feel better fast.

Joellen’s Chicken & Rice Soup       From Joellen Cook’s “Recipes With A Story Collectionâ€
8 cups chicken broth
1 cup uncooked brown rice
1 onion – sliced and quartered
1 bay leaf
2 teaspoons freshly grated sea salt
2 garlic cloves – chopped or two tablespoons of prepared garlic
2 – 3 cups chicken – cooked and cubed – skinless
3 carrots, peeled, halved crosswise
Fresh ground pepper to taste
Chopped fresh Italian parsley
Combine first six ingredients in large pot and simmer for one hour. Add carrots and chicken and cook 30 minutes longer. Season wth pepper to taste.Â
Sprinkle with finely chopped parsley and serve.
