Recipes With a Story – Chris’ Taco Soup
I’ve had a recipe book for years where I collected friends and family recipes of tasty treats to make for later. Some thought my book Sardines, Cheese and Soda Crackers: Reflections From a Country Girl was just that. Â I begged to disagree but,Â
as of late, I have been doing a good bit of cooking and some of those recipes are from friends that have meant a great deal to me over the years, some of whom are in my book.Â
With that in mind, this my first of a series of recipes I will share with you in the coming days…all with some fond memories of friends and family. Â
My wish for you today is that you savor the moments in life when you share meals and other good times with the special people in your life.  For those of you who like tacos, this is definitely worth the effort. Â

Chris’ Taco Soup        From Joellen Cook’s “Recipes With A Story Collectionâ€
1 lb. of hamburger and 1 onion cooked together and drained
1 can of black beans undrained
1 can of Bush chili beans – mild – undrained
1 pkg. of Hidden Valley Ranch dressing
1 pkg. of Elpso taco seasoning mix – mild
2 cans Rotel original wild diced tomatoes w/chilis and cilantro undrained
2 cans 15 1/2 oz red Hanover kidney beans undrained
1 can  15 oz Conladina tomato sauceÂ
1 cans 15 1/2 oz  Stokeley’s old kernel corn undrained

Put it in crock pot and cook all night OR for several hours at a minimum. Prepare sour cream, chips, and sharp cheddar cheese to serve on side.  If soup becomes too thick, DO NOT ADD WATER, add V-8 juice.

My favorite fishing buddy – Chris
Chris and Barbara are some of my best friends. Chris recently died after a long illness. He was a master chef, among other things, and loved cooking for friends and family around the holidays. This is one of my favorite soups he made. I hope you enjoy it as much as I do.
